Truffle Pasta---Not Just Another Pasta(Tie-yah-REEN)

Tajarin (pronounced (Tie-yah-REEN) is egg dough pasta  that is very popular in Piedmont, Italy. It is made from scratch by Piedmont cooks and shaped thinner than tagliatelle common to Bologna. Tajarin from Casa del Tartufo is made with freshly chopped black truffles from Alba that gives this pasta a special gourmet flavor.

Tajarin Cooking Directions:

For a main dish, an ideal serving is 80 gr. (2.82 oz.) per person, with 3 servings per package. Bring water to boil. Add tajarin and let simmer for no longer than 4 minutes. Be careful not to overcook to conserve the delicate truffle flavor.

Keep it Simple-Dishing out Tajarin pasta

We recommend adding butter or regular olive oil and some freshly grated Parmigiano Reggiano cheese to the delicious pasta. It is best not to subdue the truffle aroma in Casa del Tartufo tajarin by adding too many additional flavors.

Tajarin Pasta Appetizer

Surprise your guests with a gourmet appetizer by serving a small portion of tajarin before the main course. After cooking, add 2 tbsp. of butter, grate parmesan, mix and serve in a cup. Decorating with a slice of fresh truffle on top will give an extra zest to the dish.

Pairing tajarin with wines is simple and enjoyable with so many choices. The options range from white wine, such as Arneis, Alta Langa DOCG to red, like Barbera or Dolcetto, or sparkling rose, such as Metodo Classico.
