Tajarin (pronounced (Tie-yah-REEN) is egg dough pasta that is very popular in Piedmont, Italy. It is made from scratch by Piedmont cooks and shaped thinner than tagliatelle common to Bologna. Tajarin from Casa del Tartufo is made with freshly chopped black truffles from Alba that gives this pasta a special gourmet flavor.
Tajarin Cooking Directions:For a main dish, an ideal serving is 80 gr. (2.82 oz.) per person, with 3 servings per package. Bring water to boil. Add tajarin and let simmer for no longer than 4 minutes. Be careful not to overcook to conserve the delicate truffle flavor.
