Alba's White Truffle (tuber magnatum pico)
Fresh white truffles are gently pulled from the ground with the help of a truffle hunting dog and a licensed truffle hunter. The trifolao (truffle hunter) uses a specific hand rake to remove the white truffle. Known as the Tuber Magnatum Pico, or the Alba White Truffle, the mysterious white truffle is considered by some to be a natural aphrodisiac. The prized fungus is known for its distinct earthy flavor, musky scent and pungent aroma. The white truffle has been a gastronome’s dream and it is coveted by chefs worldwide, who create culinary delights from the elusive white truffle.

Varies from yellowish to yellowish–gray as well as brown tones.
White Truffle Size
The Albas white truffle vary in size from the size of a walnut to as large as a fist, and in very rare cases can be as large as a softball.
Uses for White Truffles
Traditionally, fresh white truffles are shaved over 4 main dishes: eggs, risotto, pasta and veal row meat. Each year, customers from around the world travel to Alba to attend the truffle festival where these culinary delights are served.
What do truffles taste like?
The white truffle can be described as earthy, with a pungent aroma. Some say that truffles have a garlicky taste and an aroma that can be best described as musky. For some the aroma is pleasant, yet indescribable. A fresh truffle will fill the room with its unique and pleasant aroma.
All Fresh Truffles are shipped Monday – Thursday via DHL or FedEx Standard Overnight. Orders placed after Thursday at 3pm will ship the following Monday.
